Air Fryer Gammon
This easy air fryer gammon recipe makes the perfect juicy, tender gammon ham. Ideal for a simple, delicious and affordable roast dinner.

- 2 pound gammon ham (see notes for smaller or larger gammon joints)
Preheat your air fryer to 170 C / 340 F. Wrap your gammon in foil, and air fry for about 45 minutes, or until the internal temperature measures 65 C / 150 F. I like to use a meat thermometer inserted into the middle of the joint to ensure that it's cooked perfectly. Combine the cranberry sauce, mustard and maple syrup to make the glaze, if using. Carefully remove the gammon from the air fryer, unwrap it, and remove any kitchen strings and rind. Score the fat on top of the gammon, and use a spoon or pastry brush to coat the top of the gammon with the glaze. Then place the gammon back into the air fryer, glaze side up, and wrap it back up. Air fry for another 5 minutes. 1 tablespoon maple syrup, 1 teaspoon Dijon mustard, 2 tablespoons cranberry sauce
Unwrap the top of the gammon, and turn the temperature up to 200 C / 390 F. Air fry for another 5 minutes, or until the top of the gammon is starting to look charred. Keep an eye on it, as the fat can quickly get burned at this point.
Allow the gammon joint to rest for at least 15 minutes to allow the juices to settle, then carve it and serve.
- Glaze: the glaze is completely optional, and you can choose to omit it if you want. You can also adjust the ingredients to suit your personal preferences.
- Different sized roasts: The cooking times will vary depending on the size of your gammon. I recommend using a meat thermometer to ensure the best results.
- Store any leftovers in a fridge for up to 5 days, or freeze for up to 2 months.
